Carrot Cake Bliss Balls
Ingredients
- 1 carrot
- 1/2 cup pitted dates
- 1/4 cup dried apricots
- 1 cup jumbo rolled oats
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 tsp maple syrup
- 1/2 cup dessicated coconut
Instructions
- Grate carrot, add to blender with remaining ingredients, except desiccated coconut.
- Blend until mixture comes together.
- Place desiccated coconut on a plate.
- Roll tablespoon size amount of carrot mixture into balls.
- Roll balls in coconut.
- Place in fridge for minimum of 30 minutes. Store in an airtight container for up to 5 days.
