PB & J Chia Pudding with Chopped Peanuts & Berries

Peanut butter and jelly are a classic duo that we’ve combined in our version of a chia pudding. Featuring fibre-rich chia seeds, and topped with chopped peanuts and berries, it’s the perfect way to kick-start your day. 

PB & J Chia Pudding with Chopped Peanuts & Berries

Servings 3 (Great meal prep for 3 days!)
Total Time 3 hours

Ingredients

Chia Pudding:

  • 3/4 cup milk of your choice
  • 1 cup water
  • 1 tsp freeze fried raspberry powder optional
  • 1/2 tsp vanilla extract
  • 2 tsp honey
  • 6 tbsp chia seeds

To Serve:

  • 2 tbsp peanut butter
  • 1/2 cup berries fresh or frozen
  • 2 tbsp chopped peanuts
  • 2 tsp freeze dried raspberries optional

Instructions

  • Make chia pudding: Add milk, water measure, raspberry powder (if desired), vanilla and honey to a bowl and whisk until honey has dissolved. Whisk in chia until well combined. Stir well and portion into 3 containers. Place in fridge to set for at least 3 hours, or overnight. 
  • Serve: Each day, top each chia portion with 2 teaspoon peanut butter and fresh fruit or frozen berries of choice. Sprinkle over 2 teaspoon chopped peanuts and crumble over some freeze-dried raspberries, if desired.
