Perfect to cook once, eat twice, this simple wrap features falafel, veg and delicious sundried tomato dressing for an effortless lunch time win.
Ingredients
- 200 grams pre-cooked falafel (from frozen_ or pre-made falafel mix of your choice
- 1 pack wheatmeal tortillas (4 pack)
- 4 tsp plain yoghurt
- 1 carrot grated
- 50 grams lettuce
- 1 tbsp sundried tomato pesto
Instructions
- Cook falafel: Make falafel according to pack instructions (note pre-made falafel mix will take longer to shape and cook).
- Heat wraps: Place stack of tortillas on a microwavable plate and microwave for about 1 minute to warm.
- Serve: Spread yoghurt onto tortillas and fill with carrot, rocket and falafel. Drizzle over sundried tomato pesto and wrap. Serve any extra salad on the side.
