Beef Wasabi Bowl with Crunchy Peanut Salad & Edamame

Sesame-spiked beef mince and tender edamame sit atop a bed of crisp, fresh salad, all drizzled with a bold wasabi dressing. 37g of protein and ready in just 15 minutes, this vibrant dish is a guaranteed winner.

Ingredients

Beef & Edamame

  • 2 tsp sesame oil
  • 400 grams beef mince
  • 2 cups edamame beans
  • 10 g sesame seeds
  • 1 tsp Chinese five spice
  • 1 tbsp soy sauce

Crunchy Salad

  • 1 twin pack baby bok choy thinly sliced
  • 100 g baby leaf lettuce
  • 200 g mung bean sprouts
  • 25 g chopped peanuts
  • 2 tbsp rice wine vinegar

Wasabi Dressing

  • 1 tsp sesame oil
  • 1 tbsp grated ginger
  • 1 tbsp rice wine vinegar OR juice of 1 lime
  • 2 tbsp water

Instructions

  • Cook beef & edamame: Heat sesame oil in a frypan on medium-high heat. Add beef mince, edamame, sesame seeds, measure of spices and soy sauce to pan. Cook for 3-5 minutes, tossing occasionally, until tender and warmed through. Season to taste with soy sauce. 
  • Make crunchy salad: Thinly slice bok choy. Toss in a bowl with all remaining salad ingredients and season to taste with salt and pepper. 
  • Make wasabi dressing: Mix together all ingredients in a small bowl.  
  • Serve: Divide salad between bowls and top with beef and edamame. Drizzle over wasabi dressing.
