Smashed Edamame Wraps

We love an easy lunch wrap! They’re quick to throw together, and our chef’s make sure they’re nutritionally balanced for a satisfying, healthy lunch. We’ve used edamame beans and feta as the protein source – you could swap the beans for shredded chicken as a great alternative.

Smashed Edamame Wrap

Total Time 10 minutes

Ingredients

  • 1 cup edamame beans
  • 1 Lebanese cucumber cut in half lengthways and thinly sliced
  • ½ baby cos lettuce shredded
  • 50 g feta cheese crumbled
  • 2 Tbsp coriander roughly chopped
  • 50 g plain yoghurt
  • 2 wheatmeal or seeded wraps

Instructions

  • Cook edamame
    Bring a full kettle to the boil. Place edamame and a pinch of salt in a large heatproof bowl and cover with boiling water. Cover and leave to cook for about 6 minutes, until tender. Drain well and return to bowl.
  • Prep ingredients.
    While edamame cooks, thinly slice cucumber, shred lettuce, crumble feta and roughly chop coriander. Set all aside.
  • Combine ingredients
    Add feta and coriander to bowl with cooked edamame along with yoghurt and a pinch of salt. Roughly smash with a fork to combine and season with salt and pepper.
    Add lettuce and cucumber to bowl and fold to combine.
  • Finish wraps
    Pack wraps and with smashed edamame salad.
