Fresh Start’s Thai Salmon Noodle Bowl

With smoked salmon and a delicious Thai-style dressing, this quick and easy lunch bowl is a tasty, filling option.

Thai Salmon Noodle Bowl

Ingredients

  • 100 g vermicelli noodles string removed
  • 350 g pre-cut slaw
  • 1 tsp garlic flakes
  • 100 g Thai-style salad dressing
  • 180 g smoked salmon
  • 1 Tbsp roasted peanuts
  • pinch chilli flakes

Instructions

  • Before you start 
    Bring a full kettle to the boil.
  • Cook vermicelli 
    Remove string from vermicelli. Place noodles in a large heatproof bowl and cover with boiling water. Use a fork to separate strands, then cover. Leave for 5 minutes, then drain well. Return to bowl and cut in a few places with kitchen scissors to make them easier to eat.
  • Finish salad 
    Add slaw, garlic flakes and Thai dressing to bowl. Flake in salmon and toss gently to combine.
  • Serve 
    Serve salad in bowls. Sprinkle over peanuts and chilli flakes.
