Ingredients

Salad

  • ½ cup Israeli couscous
  • ½ broccoli cut into small florets
  • 1 tsp oilive oil
  • 1 tsp garlic powder
  • 100 g spinach
  • 2 Tbsp pistachios
  • 2 Tbsp dried cranberries
  • 50 g feta cheese crumbled
  • salt & pepper to taste

Mustard dressing

  • 1 Tbsp Dijon mustard
  • 2 tsp olive oil
  • 1 Tbsp honey
  • ½ lemon juiced

Instructions

  • Before you start
    Preheat oven to 210°C (or 200°C fan bake) and line an oven tray. Bring a pot pf salted water to a boil on a high heat.
  • Prep and cook broccoli & couscous
    Cook couscous according to packet instructions (approximately 8-10 minutes), or until couscous is tender. Drain well through a sieve and transfer to a mixing bowl.
    Cut broccoli into small florets. Toss onto lined oven tray with oil and garlic powder and spread in a single layer. Season with salt and pepper. Bake for 15-20 minutes, until broccoli is tender and browned.
  • Prep salad ingredients
    Meanwhile, heat oil in a fry pan on a medium-high heat. Add pistachios and cook until browned and fragrant.
  • Prep the dressing
    In a bowl, whisk together the dressing ingredients. Adjust ratios to your liking. Season with salt and pepper.
  • Finish broccoli & couscous
    When broccoli has finished baking, add to mixing bowl with couscous, remaining salad ingredients and mustard dressing. Toss to combine and portion into bowls. Enjoy!
