Date and Peanut Butter Bark

This date and PB bark is the perfect combination of flavours and textures with soft dates, creamy peanut butter, a crunch from the chocolate and chopped peanuts all finished with a sprinkle of sea salt which elevates this to the next level.

Ingredients

  • 16 dates pitted
  • 1/4 cup peanut butter
  • 80 g dark chocolate chopped
  • 1 tsp coconut oil
  • 2 tbsp roasted peanuts
  • flaky sea salt

Instructions

  • Line a chopping board with baking paper.
  • Open out dates and lay in a square on lined chopping board. With a piece of baking paper and the bottom of a glass, press the dates until they are flat and mostly no baking paper is showing between them.
  • Spread the peanut butter over the dates into a thin, even layer so it is covering all of the dates. Tip: microwave peanut butter for 30 seconds and give it a good stir if it a bit thick and hard to spread.
  • In a microwave safe bowl, add the chocolate and coconut oil and microwave for about 2 minutes, in 30 seconds increments. Once fully melted, spread chocolate over the peanut butter into a thin, even layer.
  • Sprinkle over peanuts and flaky sea salt.
  • Refrigerate for at least 1 hour before cutting into 10 pieces.
