Fudgey Black Bean Brownies

These chocolatey brownies are full of goodness. They contain no gluten, dairy or refined sugar and have a decent hit of protein! The ideal sweet treat!

Fudgey Black Bean Brownies

Ingredients

  • 1 400g can of black beans, rinsed and drained
  • 1 egg
  • 2 egg whites
  • ½ ripe avocado
  • ½ cup unsweetened cocoa or cacao powder
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • cup maple syrup or coconut sugar

Instructions

  • Preheat oven to 180°C. Line a small loaf tin with baking paper.
  • Add all ingredients to a food processor and combine for about 2 minutes, until thick and smooth. Alternatively, mash the beans in a large bowl and whisk in all remaining ingredients until very smooth.
  • Transfer mixture to prepared tin and bake for about 25-30 minutes, or until brownie springs back when pressed.
  • Allow to cool for about 1 hour before turning out onto cooling rack to cool completely.
  • Cut cooled brownie into 10 delicious squares. Coat with a little sifted cocoa, if desired.
