ANZAC Granola Clusters

These crunchy granola clusters are the perfect topping for your yoghurt or smoothie bowl in the morning. It's like eating ANZAC biscuits for breakfast expect better! Deliciously balanced with the addition of seeds and sweetened with honey, these will be enjoyed by all!

Ingredients

  • 3 cups rolled oats
  • 1 cup desiccated or shredded coconut
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup chia seeds
  • 1/4 tsp ground cinnamon
  • 1/2 cup coconut oil
  • 4 tbsp honey
  • 1/2 tsp vanilla extract

Instructions

  • Preheat oven to 160°C and line 1-2 baking trays with baking paper.
  • Combine oats, coconut, pumpkin seeds, sunflower seeds, chia seeds and cinnamon in a bowl.
  • In a microwave safe bowl, melt coconut oil and honey in the microwave for 30 seconds.
  • Add coconut oil, honey and vanilla extract to the dry ingredients and mix well.
  • Press mixture onto prepared trays and bake for 20 minutes.
  • After 20 minutes, turn the tray around and bake for another 10 minutes or until golden brown.
  • Allow to cool completely before breaking into clusters.
