Greek Spiced Beef & Chickpea Bowl

An easy bowl to whip up for lunch or a light dinner. The Greek spices add delicious flavour without needing to add extra salt and the addition of chickpeas boosts the fibre and protein content of the meal!

Ingredients

Greek Spiced Beef & Chickpeas

  • ½ red onion finely diced
  • 1 carrot grated
  • ½ can chickpeas drained & rinsed
  • ½ tsp oil
  • 250 g lean beef mince
  • ½ tsp lemon pepper
  • ½ tsp paprika
  • ½ tsp oregano
  • ¼ tsp chives
  • ¼ tsp ground cumin
  • ¼ cup chicken stock
  • Tbsp tomato paste

Salad

  • ½ red onion thinly sliced
  • 1 capsicum diced 1cm
  • 1 radish thinly sliced
  • 1 baby cos roughly chopped
  • 1 tsp vinegar

To Serve

  • 1 handful mint leaves picked
  • 2 Tbsp feta crumbled
  • 2 Tbsp hummus
