Salted Caramel Protein Pancakes with Caramelised Banana, Serves 4

Flavoured with Two Island's delicious salted caramel protein powder, these pancakes are a great way to start the day, with around 24g of protein per serve!

Ingredients

Pancakes

  • 2 pack salted caramel pea protein powder
  • 1 pack wholemeal flour mix
  • 1 tsp baking powder
  • 200 g Greek yoghurt
  • 3/4 cup milk
  • 2 eggs

Topping

  • 2 banana, sliced on an angle
  • 2 Tbsp honey
  • 200 g Greek yoghurt

Instructions

  • Mix protein powder, wholemeal flour mix, baking powder, yoghurt, milk and eggs in a bowl until well combined.
  • Peal and slice banana on an angle into 1 cm rounds. Set aside.
  • Heat spray oil in a pan on low heat. Add large spoonful amounts of pancake batter. Cook low and slow until you see the bubbles appear and pop. Flip and cook other side. Repeat until you have made (12 small or 8 big) pancakes. Reserve pan.
  • When you have finished making the pancakes, add banana to reserved pan. Drizzle honey over banana. Cook each side for 1 minute until golden. Sprinkle with flaky salt (optional).
  • Top pancakes with remaining yoghurt and caramalised banana.
