Pantry Panic: Corn Fritters

So, you didn’t go the supermarket, forgot to get MADE & don’t seem to have cash for takeaways. Before you resort to toast, try this super simple recipe and enjoy a fresh meal in a flash.

Quick Corn Fritters, using pantry staples!

Whisk together 2 eggs, ½ cup self-raising flour, 2 tsp smoked paprika, 1 tsp salt and until smooth. Fold in 2 cups corn (canned or frozen), 1 grated courgette and ½ cup grated cheese. Heat some oil in a fry-pan and cook fritters, in batches, for 2 mins each side, until cooked through. Serve with a side salad and some tasty relish.

Keep this recipe on hand and you’ll always be able to whip up a quick dinner. It’s great with most veggies too!
