Double Chocolate Chip Cookies

  • 170 g butter
  • 2 eggs
  • 1 pack double chocolate chip cookie mix


  • Preheat oven to 180°C.
  • Melt butter in a heat-proof bowl in the microwave. Set aside for 5 minutes to cool.
  • In a large bowl, whisk eggs. Stir in melted butter, cookie mix and a pinch of salt. Combine to form a dough. Place in the fridge for 30 minutes to firm up.
  • Dollop tablespoon measures of cookie dough onto a lined tray (leave a 5cm gap) and bake for 10-12 minutes, until golden. Allow to cool for 10 minutes before eating.
