Pulled Beef & Cheese Hand Pies, Serves 4

Pulled beef paired with red pepper Bolognese, vegetarian jus and cheese in a flaky pastry parcel – these pies are just as good (if not better) than the bakery!

  • 1 drizzle of oil ^
  • 200 g pulled beef crumbled
  • 100 g vegetarian jus
  • 200 g red pepper pesto Bolognese
  • 375 g vegan flaky puff pastry
  • ¼ cup milk ^
  • 100 g grated mozzarella cheese

    Instructions

    • Preheat oven to 200°C (or 180°C fan bake).
    • Heat oil in a frypan on medium-high heat. Add pulled beef to a pan and cook for 4-5 minutes, breaking up with a spoon as it cooks, until browned. Add vegetarian jus and red pepper pesto Bolognese and bring to a simmer. Simmer for 3-4 minutes, until reduced. Season to taste with salt and pepper.
    • Carefully roll out pastry and cut into 4 squares. Transfer pastry squares to a large lined oven tray and use a pastry brush to brush the edges with milk.
    • Divide pulled beef mixture between the four squares of pastry using a 1/4 cup measure, placing it in the middle of each square (there will be leftover filling; serve on the side or save for later). Top filling with cheese (save a small amount of cheese to sprinkle over the pies). Fold the pastry over the filling to make a triangle and use a fork to crimp down the edges. Brush pies with milk and sprinkle over reserved cheese.
    • Cook pies on middle oven rack for 20-25 minutes or until golden.
